Day 2
Today I had a bit less fruit in my morning smoothie, had great lettuce wraps for lunch and then a salad for dinner. I snacked on fruit throughout the day. Here's my recipe for lunch:
Ingredients:
Vine ripe tomatoes
Celery stalks
Kirby cucumber
Cilantro
Red onion
Raw cashew pieces
Raw sesame seeds
Lime juice
Avocado oil
Salt to taste
Iceberg lettuce
Baby Arugula
Recipe:
Cube all the veggies and add them to a bowl. Finely chop the cilantro and red onions and add in. Add in the lime juice, avocado oil, salt, sesame seeds and cashews and mix. Let stand for 20+ minutes.
