VEGAN MUSHROOM & LEEK SOUP

Ingredients:
2 organic Leeks
2 cups of mushrooms
1 cup unsweetened almond milk
2 tbs nutritional yeast
Instructions:
- Slice the mushrooms and the leeks
- Heat a pan on med-high heat
- Add in 1/4 cup of water and the nutritional yeast and let simmer
- add in the mushrooms and the leeks and let them sauté in the nutritional yeast liquid
- lower the heat to medium and stir until the leeks and mushrooms are cooked through
- pour the almond milk into a high power blender (Vitamix is best) and then add the cooked mixture, but leave a little for garnishing
- Blend on high (soup dial on vitamix) until you get a smooth consistency
- Pour in a bowl and add the rest of the cooked mixture on top as garnish
- Yum! ENJOY!
