Recipe: Guilt-free mini Pizza

~ 42 Calories/mini pizza 


I wanted to experiment in trying to make a non-wheat healthy pizza.  I wanted to substitute the dough, which is really the worst part for the waistline.  What I ended up doing was substituting eggplant (aubergine) for the pizza dough.


Pizza crust:
1/2 eggplant cut into slices and dehydrated overnight
(I think this might also be doable in the oven- turn and don't allow to burn)

Pizza Sauce:
1 Can of organic diced tomatoes
1 clove of garlic
1/4 red onion
10 large basil leaves (fresh)
chop together in a food processor

Pizza:
Take your hardened eggplant and add 1-2 tbs of sauce.  Then top with a light sprinkling of cheese.  I used raw sheep cheese, but you can use a low-fat cheese for dukan.  Or just omit for bruschetta. Garnish w/small basil leaves and you've got healthy mini pizza!

Ok, so I know technically you're not supposed to have avocado on Dukan, so I only recommend this to people on the Stabilization, Consolidation, or modified Dukan phases.  I have gone from Dukan Cruise Phase to a modified Dukan Veggie/Protein Phase, which seems to be leading me to a predominantly Raw Food Diet.  I have pretty much cut out all refined & processed foods.  I buy a ton of veggies, but I still am eating meat (mostly fish), and I do have cheese once in a while (low-fat organic).  By the way, the scale went down yet again- Today Im at 188.4 down from 220!

Ok, so here's the recipe - Super simple!

Ingredients:

2 Zucchini
1 Avocado (thinly sliced)
0.5 Vine ripe tomato (diced)
Fresh cilantro chopped
Raw red onion chopped
Salt to taste

Recipe:

Take the sliced zucchini (~ size of a nickel) and dehydrate over night.  If you don't have a food dehydrator - get one - they're AWESOME!!! or just put in the oven for about 15' but keep an eye not to burn and make sure you turn over.
To make the guacamole just take a ripe avocado and smash it up with the bottom end of a fork.  Then add in the other ingredients- add in the cilantro and onions to your liking.  AND YUMMY!

Planning for healthy snacks...

Tomorrow I start my first day at the new job.  I wanted to make sure I stocked up the fridge with lots of healthy snacks to take to work.  I will eat my usual breakfast (4 egg whites with ham & coffee) at home, and then pack 2 snacks (am/pm) and a lunch.  I made a HUGE batch of my Chicken Tikka Masala (see recipe), and I'm going to freeze it for the week.  I will also probably take salmon or tuna for my PP days.  I figure if I have good snacks on hand I can have a smaller lunch and then eat dinner when I get home.  These are some of the snacks I got.  They're mostly dairy, but I don't usually have dairy in meals other than snacks....

Imitation crab (0% fat)- 3 small pks

Fage Greek Yogurt (0%fat)- 14

Toasted Coconut Vanilla Yogurt (0%fat)- 1-4pk

Celery- 1 bag
Sliced Turkey Breast (97% fat free)- 0.5 lbs

Fat free Swiss Cheese - 1 pk
Fat free/Sugar free Cheesecake pudding - 3 bx
(for special days that I need a treat and I exercise a lot)


Fat free/Sugar free Boston Cream Pie Pudding- 1 pk (6)(for special days that I need a treat and I exercise a lot)
