Recipe: Fetuccini Alfredo- NO pasta NO cheese


 

MY FAVORITE RAW RECIPE
Fetuccini Alfredo- NO pasta NO cheese

You will need the following:


spiralizer: you can get this for $25 at amazon: http://www.amazon.com/Epica-Manual-Multi-Blade-Spiral-Vegetable/dp/B009UEWLMW/ref=sr_1_8?ie=UTF8&qid=1357089937&sr=8-8&keywords=spiralizer

Processor: Either a food processor or a good blender.  If you have a Vitamix, it's the best!

Ok, now for the ingredients:

3 large green zucchini (hard and organic is best)
1/3 cup of pinenuts
1/2 garlic clove (chopped)
4 leafs of basil
himalayan pink salt to taste (or sea salt)

Now the magic happens...

- peel all of your zucchini
- spiralize 2 of the 3 zuchini- BOOM- pasta free "pasta"!
- take the other zucchini and cube
- add that to your processor (blender) with the rest of your ingredients and process until creamy- YUM cheese free "alfredo"!
- add your spiralized zucchini to a large bowl then pour your "alfredo sauce" on top.
-now mix.  I prefer to do this with my (clean) fingers and then lick them ;)
- here is your low fat raw vegan fettucini alfredo-- enjoy!
