Recipe: Vegan Mushroom & Leek Soup


VEGAN MUSHROOM & LEEK SOUP
200 calories


Ingredients:

2 organic Leeks
2 cups of mushrooms
1 cup unsweetened almond milk
2 tbs nutritional yeast

Instructions:

  • Slice the mushrooms and the leeks
  • Heat a pan on med-high heat
  • Add in 1/4 cup of water and the nutritional yeast and let simmer
  • add in the mushrooms and the leeks and let them sauté in the nutritional yeast liquid
  • lower the heat to medium and stir until the leeks and mushrooms are cooked through
  • pour the almond milk into a high power blender (Vitamix is best) and then add the cooked mixture, but leave a little for garnishing
  • Blend on high (soup dial on vitamix) until you get a smooth consistency
  • Pour in a bowl and add the rest of the cooked mixture on top as garnish
  • Yum!  ENJOY!
